- 1 lb. chicken breast, cubed
- 1 can pineapple chunks (20 oz.)
- 1 green pepper, cut in strips
- 1 red pepper, cut in strips
- 1 carrot, sliced thin
- 1/4 c. vinegar
- 2 tsp. sugar or substitute
- 1 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 3/4 c. strong chicken broth
Directions

1Bring broth to a boil; add chicken cubes.

2Simmer 10 minutes, stirring occasionally.

4carrot slices, red and green peppers, vinegar and sugar.

5Bring to a boil.

6Stir cornstarch into soy sauce until smooth.

7Stir into chicken mixture.

8Bring to a boil, stirring constantly.

9Lower heat. Cover and simmer 10 minutes.
