- 6 lean pork chops
- salt
- pepper
- 1 c. dry rice
- 1 large can tomatoes (whole)
- 2 Tbsp. oil
Directions

1Salt and pepper pork chops to taste.

2Brown chops quickly in 2 tablespoons oil.

3Place chops in 9 x 12-inch cooking dish.

4Add dry rice to skillet where chops were browned.

5Stir rice constantly until brown.

6Place rice in baking dish over chops. Pour can of tomatoes over rice and chops.

7Cover well with foil. Bake at 350° for one hour.
