- 2 -3 large carrots, sliced
- 2 -3 large celery ribs, sliced
- 1 large yellow onion, diced
- vegetable stock
- 8 ounces low-fat cream cheese
- salt and pepper
Directions

1Chop all veggies.

2Put veggie in stock pot with just enough broth to cover the vegitables.

3Bring to boil and cook until potatoes are soft, about 25 minutes.
