- Nut Cookie Crust
- 2 eggs
- 1 c. canned pumpkin
- 3/4 c. packed brown sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. each: ground ginger, ground cloves and ground nutmeg
- 1 (13 oz.) can evaporated milk

1Prepare nut cookie crust.

2Heat oven to 425°.

3Beat eggs slightly in large bowl; stir in pumpkin, brown sugar, cinnamon, salt, cloves, ginger and nutmeg until smooth; gradually stir in evaporated milk.

4Pour into crust.

5Cover edge with 2 to 3-inch strips of aluminum foil to prevent excessive browning.

6Bake 15 minutes.

7Reduce oven to 350°.

8Bake until knife inserted near center comes out clean, 45 to 55 minutes longer.
