Ingredients

  • 3-5/8 ounces, weight Digestive Biscuits, Ginger Nuts Or Any Other Cookie
  • 1-1/2 ounces, weight Demerara Sugar
  • 1-7/8 ounces, weight Butter, Melted
  • 1 pound, 1-2/3 ounces, weight Full Fat Cream Cheese
  • 3-5/8 ounces, weight Icing Sugar / Powdered Sugar
  • 1 teaspoon Vanilla Extract Or Seeds Of 1 Vanilla Pod
  • 11 tablespoons, 2-1/2 teaspoons, 1/8 pinches Double Cream

Directions

    Crush the biscuits/cookies and mix with the demerara sugar and melted butter. Spoon into an 8-inch cake tin, lined with baking parchment. Press down firmly and chill in the fridge.

    Meanwhile, beat together the cream cheese, icing sugar and vanilla with a spoon until mixed. Fold in the cream, mixing well. Spoon the mix over the base and smooth the top.

    Chill in the fridge for at least 1 hour until set.

    Note: You can add fruit and other flavours to the mixture. I served it with grated chocolate and some strawberry puree.
