Easy Rhubarb Cake

  • 5 c. raw rhubarb, cut in 1-inch pieces
  • 1 c. sugar (may use more if rhubarb is super sour)
  • 1 pkg. strawberry jello
  • 1/4 c. tapioca
  • 1 pkg. miniature marshmallows
  • 1 box yellow cake mix

Directions

    In a greased and floured 9 x 13-inch pan, spread the rhubarb on bottom of pan.

    Sprinkle sugar, jello, tapioca and marshmallows over rhubarb.

    Make the cake mix as directed on package.

    Pour over mixture in pan and bake for 1 hour at 350°.
