Easy Risotto Recipe

Ingredients

  • 1 pound grnd beef
  • 2 (13 ounce.) cans chicken broth
  • 1 or possibly 2 medium onions, minced
  • 3 stalks celery, minced
  • 1 c. rice or possibly 1 1/2 c.
  • 1 teaspoon saffron (threads) or possibly 1/2 teaspoon powdered
  • 1 can corn or possibly peas (optional)

Directions

    Saute/fry onion and celery in a little extra virgin olive oil till tender.

    Add in grnd beef; cook till browned.

    Stir in rice.

    Add in chicken broth and then stir in the saffron.

    Bring to boil, then cover and reduce heat to simmer till rice absorbs the broth.

    This dish is best cooked in a large skillet.

    When the rise is done, at this point you could add in the corn or possibly peas or possibly any other vegetables depending on your tastes and enjoy!
