  • salt and pepper to taste
  • 1 or 2 cloves garlic, minced
  • 1 broiler-fryer (about 2 1/2 lb.), cut up
  • 1/2 c. cream (not dry) sherry or Madeira
  • juice of 1 small lemon (about 1 1/2 to 2 Tbsp.)
  • 1/4 c. butter, melted
  • 1 tsp. rosemary

    Season chicken with salt and pepper.

    Place in shallow baking pan.

    Mix well remaining ingredients; pour over chicken.

    Roast in preheated 350° oven, basting every 15 to 20 minutes, for 45 to 60 minutes or until golden brown and fork-tender.
