Ingredients
- 1 cup sugar
- 1 lb butter
- 3 1/2 cups flour, all purpose
- 1 cup rice flour
- 2 tablespoons sugar
Directions

1Preheat oven to 350F.

2Place 1 cup sugar in food processor; blend 30 sec.

3(or use fruit sugar).

4Add to softened butter and cream mixture until very fluffy.

5Combine flour and rice flour.

6Beat into batter in small portions.

7Turn batter out onto a lightly floured surface.

8Knead until smooth, adding up to 1/2 c more all-purpose flour, if needed.

9Press into a 15 x 9 jelly roll pan.

10Score into bars with a sharp knife.

11Prick surface with fork.

12Sprinkle with remaining 2 T sugar.

13Bake 10 minutes then lower heat to 300F and bake until golden, about 30 to 40 minutes.
