- 2 cup medium grain rice
- 3 1/2 cup water
- 1 32 oz can diced tomatoes
- 1 yellow onion
- 1 1/2 tbsp vegetable oil
- 1 salt and pepper
Directions

1Heat oil in sauce pot.

2Add onions and sweat until translucent.

6Cook 30 seconds

7Add water.

8Bring to simmer.
