- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1 lb. process cheese with mild jalapeno peppers, cut into cubes
- 1/2 c. milk
- 1 small onion, diced
- 1 (2 oz.) jar diced pimiento, drained
- 1 medium tomato, diced
Directions

1Place spinach between paper towels and squeeze until barely moist.

2Set spinach aside.

3Combine cheese, milk, onion and pimento in top of a double boiler; bring water to a boil.

4Reduce heat to low; cook until cheese melts.

5Add spinach and tomato, stirring well.

6Serve warm with tortilla chips.
