Easy Spinach Lasagna

Ingredients
- 9 to 10 lasagna noodles (uncooked)
- 1 to 1 1/2 lb. Ricotta cheese
- 1 pkg. frozen spinach, defrost and chop
- 1 jar spaghetti sauce plus 1 c. water
- 8 oz. chopped tomatoes (fresh or canned)
- 8 oz. Mozzarella
- 4 oz. Cheddar cheese
- garlic, basil and parsley
Directions

1Mix tomatoes, sauce and water and place a small amount in bottom of 9 x 12-inch deep foil baking pan.

2Layer 3 dry noodles. Mix Ricotta and spinach and layer with noodles and sauce.

3Add some Cheddar along with garlic and basil.

4Pour remaining sauce on top and Mozzarella last with parsley and any remaining Cheddar. Cover with foil.

5This can all be done ahead of time.

6Bake at 350° for 1 1/2 hours.

7Remove foil last 30 minutes.

8Let sit 30 minutes before serving.
