- 2 pkg. frozen spinach (creamed Seabrook if possible)
- juice of 1 lemon
- 4 eggs, plus 1 egg white (room temperature)
- 1/2 tsp. salt
- freshly ground pepper
- 4 Tbsp. butter or margarine
- 2 tsp. minced onion
- 1 or 2 Tbsp. grated Parmesan cheese (optional)
Directions

1Preheat oven to 400°.

2Butter a 2-quart souffle dish; sprinkle bottom with cheese.

3Melt 2 tablespoons butter; add lemon juice and defrosted spinach.

4Add salt and pepper.

5Separate eggs; beat yolks into spinach sauce, one at a time, with a wire whisk.

6Set mixture aside.
