  • 2 pkg. frozen spinach (creamed Seabrook if possible)
  • juice of 1 lemon
  • 4 eggs, plus 1 egg white (room temperature)
  • 1/2 tsp. salt
  • freshly ground pepper
  • 4 Tbsp. butter or margarine
  • 2 tsp. minced onion
  • 1 or 2 Tbsp. grated Parmesan cheese (optional)

    Preheat oven to 400°.

    Butter a 2-quart souffle dish; sprinkle bottom with cheese.

    Melt 2 tablespoons butter; add lemon juice and defrosted spinach.

    Add salt and pepper.

    Separate eggs; beat yolks into spinach sauce, one at a time, with a wire whisk.

    Set mixture aside.
