Spread pesto evenly on fish. Place fish, tomatoes, onion and wine or water in a microwave-safe dish and season to taste. Cover with cling wrap and microwave on High for 5 mins, or until fish is cooked through. Sprinkle with parsley and serve with potatoes and lemon wedges.
