- ground turkey (12 oz. - 3/4 lb.)
- 1 1/2 c. cooked rice (preferably brown rice)
- 1 c. finely chopped onion
- 1 tsp. dried oregano
- 4 large peppers
- 1/4 c. Parmesan cheese
- 2 large eggs (1/4 c.)
- 1 c. tomato sauce
Directions

1Cut peppers in half (2 halves per person).

2Blanch peppers for 3 minutes.

3Drain.

4Brown turkey meat.

5Add and cook onions until soft.

6Mix remaining ingredients, except tomato sauce.

7Fill peppers.

8Top with tomato sauce and cover with foil.
