Easy Stuffed Peppers

  • 4 large bell peppers (may use zuchinni)
  • 3 large mild Italian sausage (about 1 lb)
  • 12 cup long grain rice (I use basmati)
  • 34 cup chicken broth
  • 1 medium onion, small dice
  • 3 garlic cloves, minced
  • 1 pinch cinnamon
  • salt and pepper
  • 1 -2 teaspoon olive oil
  • 1 -2 cup marinara sauce (homemade preferably)

    Add olive oil to heated pan and saute onion until softened.

    Add sausage and garlic and cook all the way through.

    Add rice into the meat mixture and stir until all of the rice is

    coated and toasted through, about a minute.
