- 12 lb large shrimp, peeled, cleaned
- 3 tablespoons zesty Italian dressing, divided
- 2 tablespoons 100% parmesan cheese, grated
- 1 small garlic clove, minced
- 1 tablespoon fresh parsley, chopped
- 6 Ritz crackers, crushed

1Preheat oven to 400F Place shrimp and 2 tablespoons of the dressing in resealable plastic bag; refrigerate 20 minutes to marinate.

2Meanwhile, mix remaining 1 tablespoons dressing and the remaining ingredients in small bowl until blended.

3Remove shrimp from marinade; discard marinade.

4Partially split each shrimp lengthwise, by making a long cut along the under side of each shrimp, be careful not to cut all of the way through the shrimp.

5Open shrimp slightly and place, cut sides up, in shallow baking dish.

6Spoon about 1 tablespoons of the stuffing mixture on top of each shrimp.

7Bake 7-8 minutes or until shrimp are pink and cooked through.
