  • 1 pound ground chuck
  • 1 cup medium salsa
  • 1 1/4 teaspoons kosher salt, divided
  • 3 tablespoons fresh lime juice (from 2 limes), plus wedges for serving
  • 1/2 teaspoon honey
  • 1 garlic clove, finely chopped
  • 4 cups chopped romaine lettuce
  • 4 cups tortilla strips
  • 4 ounces sharp Cheddar cheese, shredded (about 1 cup)
  • 1 cup canned black beans, drained and rinsed
  • 1 cup fresh corn kernels (from 2 cobs)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion (from 1 small onion)
  • 1/2 cup store-bought refrigerated guacamole
  • 1/2 cup sour cream
  • 2 tablespoons cilantro leaves
