  • 1 cup chickpeas
  • 1 tablespoon fresh lime juice
  • 1/4 cup tahini sesame paste
  • 1/4 cup chopped onion
  • 2 cloves garlic chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 dash salt and pepper to taste
  • 3 fresh parsley chopped, optional

Directions

    Drain the chickpeas, reserving 1/4 cup of the liquid.

    Combine chickpeas, lime juice, tahini, onion, garlic, oil, cumin, pepper, and salt in a blender.

    Puree until smooth, adding the chickpeas liquid if needed to thin the puree.

    Refrigerate to chill at least 3 hours before serving to blend the flavors. Garnish with parsley (optional).
