- 2 bunches green onions
- 1/2 sweet onion
- 2 limes
- 1 can coconut milk
- 2 tablespoons fish sauce
- 2 tablespoons Sriracha
- 1/4 cup olive oil
- 2 teaspoons ginger grated
- 4 pounds boneless skinless chicken
Directions

1Chop green onions and onions; squeeze juice of the two limes into a large bowl.

2In large bowl, whisk together lime juice, coconut milk, fish sauce, Sriracha, olive oil, ginger, green onion, and onion.

3Divide chicken into two gallon size freezer bags (be sure to label bags first!)

4Thaw; Grill 5-7 minutes on one side, then turn over and grill 5-8 minutes longer. Arrange chicken in casserole dish and bake at 400 degrees for 30-40 minutes. Serve over cooked rice.
