- 4 cups water
- 1 cup cornmeal
- 1/4 cup soy milk
- 1 tablespoon vegan margarine, or more to taste
- 1/2 teaspoon garlic powder
- salt and ground black pepper to taste
Directions

1Bring water to a slow simmer in a large saucepan. Stir in cornmeal. Cook over low heat until smooth and thick, stirring frequently and scraping the bottom of the saucepan to avoid burning, about 15 minutes.

2Stir in soy milk, margarine, garlic powder, salt, and pepper. Remove polenta from the heat.
