Easy Vegetable Beef Soup

Ingredients
- 1 Tbsp. oil
- 3/4 lb. lean boneless beef, cut into cubes
- 1 can condensed beef broth
- 2 tsp. paprika
- 1 medium onion, sliced
- 3 c. water
- 16 oz. can tomatoes, cut up
- 1/4 c. uncooked barley
- 2 bay leaves
- 1 1/2 c. frozen mixed vegetables
Directions

1Heat oil in Dutch oven or large saucepan over medium high heat; brown meat.

2Stir in remaining ingredients except mixed vegetables; bring to boil.

3Reduce heat; cover.

4Simmer 1 1/4 hours, stirring occasionally.

5Add vegetables; simmer 15 to 20 minutes until beef and vegetables are tender, stirring occasionally.

6Remove bay leaves.

7Season to taste with salt and pepper.
