- 2 qt. spaghetti sauce (Ragu or homemade)
- 12 uncooked lasagna noodles
- 4 c. cooked vegetables (broccoli, zucchini, carrots, squash, eggplant, mushrooms, onion)
- 12 oz. cottage cheese
- 1 egg
- 1/2 c. Parmesan cheese
- salt, pepper and parsley
- 12 oz. shredded cheese (Mozzarella, Cheddar, Colby or Jack; use 2)
Directions

1Spray a 9 x 13-inch pan with Pam.

2Make a layer of tomato sauce, then 4 uncooked lasagna noodles, half the cooked vegetables, sprinkle with 1/3 of the cheese, sauce, noodles, then a layer made of the cottage cheese, Parmesan cheese, egg, salt, pepper and parsley, sauce, noodles, remaining vegetables, sauce and remaining cheese.

3Bake at 350° for 30 minutes or until bubbly around edges.
