Easy Vegetable Lasagna

  • 2 qt. spaghetti sauce (Ragu or homemade)
  • 12 uncooked lasagna noodles
  • 4 c. cooked vegetables (broccoli, zucchini, carrots, squash, eggplant, mushrooms, onion)
  • 12 oz. cottage cheese
  • 1 egg
  • 1/2 c. Parmesan cheese
  • salt, pepper and parsley
  • 12 oz. shredded cheese (Mozzarella, Cheddar, Colby or Jack; use 2)

    Spray a 9 x 13-inch pan with Pam.

    Make a layer of tomato sauce, then 4 uncooked lasagna noodles, half the cooked vegetables, sprinkle with 1/3 of the cheese, sauce, noodles, then a layer made of the cottage cheese, Parmesan cheese, egg, salt, pepper and parsley, sauce, noodles, remaining vegetables, sauce and remaining cheese.

    Bake at 350° for 30 minutes or until bubbly around edges.
