Easy Veggie Sauce

Ingredients

  • 2 large cans crushed tomatoes
  • 2 to 3 medium carrots
  • handful of fresh asparagus
  • 6 leaves fresh basil
  • 2 or 3 stalks celery
  • 2 buds garlic, chopped
  • 3 or 4 Tbsp. olive oil
  • salt and pepper

Directions

    Saute garlic, celery, carrots and whatever vegetables in olive oil, slowly.

    Can cover pan until they are pretty tender.

    When veggies are about done, add chopped basil and dump in the tomatoes.

    When fresh tomatoes are in season use them.

    Salt and pepper to taste; let simmer until ready to serve.

    Serve over cooked pasta or split baked potatoes.

    Serves 3 or 4 people.
