  • 113 cups flour, all-purpose
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon ground
  • 1 teaspoon allspice ground
  • 1/2 teaspoon nutmeg freshly grated
  • 1/4 teaspoon cloves ground
  • 1/2 cup molasses
  • 3/4 cup brown sugar, light packed
  • 1/4 cup vegetable oil preferably canola
  • 1/4 cup apple butter
  • 2 large eggs
  • 1 1/2 cups raisins, seedless

    Preheat oven to 350F (180C).

    Lightly oil a 9 by 13-inch baking dish or coat it with nonstick cooking spray; set aside.

    In a small bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg and cloves.

    In a large bowl, beat together molasses, brown sugar, oil, apple butter and eggs with an electric mixer until smooth.

    Add the dry ingredients and beat on low speed just until combined.

    Stir in raisins.

    Transfer the batter to the prepared baking dish; smooth the top.

    Bake for 20 to 25 minutes, or until the batter feels set when lightly pressed in the center.

    Let cool in the baking dish on a rack.
