- 4 pounds fresh halibut fillet
- 2 cups olive oil
- 2 tablespoons lemon pepper
- 2 lemons, juiced
- 4 tablespoons butter
- 2 tablespoons chopped cilantro
- 1 lemon, juiced
- Cilantro sprigs, for garnish
Directions

1In a baking dish, marinate the halibut with the olive oil, lemon pepper and lemon juice.

2Marinate for a couple of hours in the refrigerator.

3Use alderwood in grill (if available) for smoky Alaskan flavor.

4Place fish on hot barbecue grill and cook approximately 5 minutes per side (depending on thickness.)

5In a saute pan either on stove or grill place butter, cilantro and lemon juice.

6Cook until melted.

7Place fish on decorative plates and cover with sauce.

8Garnish with sprig of cilantro.
