  • 4 sole fillets (about 1 1/2 lbs)
  • salt & freshly ground black pepper
  • 12 lb unsalted butter, softened
  • 3 ounces salted almonds, chopped
  • 14 lb fresh mushrooms, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon
  • 14 teaspoon nutmeg, freshly ground
  • 12 cup dry white wine

Directions

    Butter a baking dish large enough to hold the fillets in a single layer; preheat oven to 375 degrees F.

    In a bowl, combine butter, almonds, mushrooms, parsley, the juice of the lemon, salt and pepper, and nutmeg; spread over fillets.

    Add wine to dish.

    Place in oven until fish flakes easily, about 20 minutes.
