  • 2 lb. fresh spinach, washed and stemmed
  • 1/2 tsp. salt
  • pepper to taste
  • 1/8 tsp. ground nutmeg
  • 1/2 c. shredded natural Swiss cheese
  • 8 Tbsp. margarine
  • 2 c. milk
  • 1/2 c. minced onion
  • 3 Tbsp. all-purpose flour
  • 1 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 12 hard-boiled eggs, quartered

    Melt 3 tablespoons margarine in large skillet.

    Add first four ingredients and mix well.

    Cover and simmer 3 minutes.

    Remove cover and raise heat.
