Egg & Bacon Pie

  • 8 slices bacon, chopped
  • 12 eggs
  • 1 teaspoon cracked black pepper
  • 2 sheets puff pastry
  • milk, for brushing

    Line a pie dish with one sheet of pastry.

    Separate eggs, whites in one bowl, yolks in another.

    Beat whites until you have stiff peaks.

    Beat yolks, and gently fold into whites.

    Scatter half of the bacon on the bottom sheet of pastry.

    Gently add eggs to pie.

    Scatter remaining bacon in pie, being careful not to flatten the egg mixture too much.

    Sprinkle with pepper.

    Place other sheet of pastry on top, and fold & press edges to seal pie.

    Pierce top layer of pastry with a sharp knife.

    Brush with milk.

    Bake at 200C for 30 minutes, or until pastry is golden and flaky.

    Let stand for 5 minutes before slicing.
