Egg & Bacon Pie

- 8 slices bacon, chopped
- 12 eggs
- 1 teaspoon cracked black pepper
- 2 sheets puff pastry
- milk, for brushing
Directions

1Line a pie dish with one sheet of pastry.

2Separate eggs, whites in one bowl, yolks in another.

3Beat whites until you have stiff peaks.

4Beat yolks, and gently fold into whites.

5Scatter half of the bacon on the bottom sheet of pastry.

6Gently add eggs to pie.

7Scatter remaining bacon in pie, being careful not to flatten the egg mixture too much.

8Sprinkle with pepper.

9Place other sheet of pastry on top, and fold & press edges to seal pie.

10Pierce top layer of pastry with a sharp knife.

11Brush with milk.

12Bake at 200C for 30 minutes, or until pastry is golden and flaky.

13Let stand for 5 minutes before slicing.
