  • 1 lb. sausage
  • 4 sq. frozen hash browns
  • 2 or 3 Tbsp. melted oleo
  • 1 c. grated Swiss, Monterey or Jack cheese
  • 6 eggs, beaten
  • 2 1/2 c. milk
  • 1/2 tsp. salt
  • pepper to taste

Directions

    Cook sausage until brown; drain.

    Place in shallow dish.

    In same pan, saute potatoes in butter until brown.

    Place potatoes over sausage.

    Sprinkle with cheese.

    Beat eggs, milk, salt and pepper; pour over cheese.

    Bake 1 hour at 350° until done.
