  • 4 eggs
  • 1/2 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing
  • 2 green onions, thinly sliced
  • 2 Tbsp. chopped fresh coriander (cilantro)
  • 1/2 tsp. red chili powder or cayenne pepper
  • 1/4 tsp. cumin seed
  • 6 small whole wheat tortillas
  • 3/4 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese

Directions

    Whisk first 6 ingredients until blended.

    Heat small skillet on medium heat; spray with cooking spray.

    Add 1/4 cup egg mixture to skillet; tilt skillet to evenly cover bottom with egg.

    Cover with tortilla; press gently into egg with back of spatula.

    (If egg spreads out from under tortilla, push egg back under tortilla with back of spatula.)

    Cook 2 to 4 min.

    or until egg is set and tortilla is crisp and golden brown, turning after 2 min.

    Top with 2 Tbsp.

    cheese; fold tortilla into thirds.

    Repeat with remaining egg mixture, tortillas and cheese.
