Egg-Sausage Quiche

  • pastry for one 9-inch pie
  • 8 oz. bulk pork sausage
  • 4 hard-cooked eggs, chopped
  • 1 c. (4 oz.) shredded natural Swiss cheese
  • 1 c. (4 oz.) shredded natural Cheddar cheese
  • 3 beaten eggs
  • 1 1/4 c. light cream or milk
  • 3/4 tsp. salt
  • 1/8 tsp. pepper

    Line a 9-inch pie plate with pastry; flute edges.

    Do not prick.

    Bake in a 350° oven for 7 minutes.

    In skillet, cook sausage; drain well.

    Sprinkle hard-cooked eggs in bottom of pie shell.

    Top with sausage and cheese.

    Combine beaten eggs, cream, salt and pepper; pour over all.

    Bake in a 350° oven for 30 to 35 minutes, or until set.
