Egg Spinach Salad

  • 1 lb. spinach
  • 1/2 c. salad oil
  • 2 Tbsp. sugar
  • 2 Tbsp. wine vinegar
  • 1 tsp. finely grated onion
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 6 slices bacon, fried and crumbled
  • 4 hard-boiled eggs, chopped
  • 1 hard-boiled egg, sliced

Directions

    Wash and drain spinach.

    Transfer to large bowl and chill. In separate bowl, combine oil, sugar, vinegar, onion, salt and mustard.

    Beat the dressing or mix in blender until it becomes thick and syrupy.

    Tear spinach and add bacon and chopped eggs. Pour dressing over salad.

    Let stand for 1 hour.

    Toss the salad to mix it and garnish with egg slices.
