Egg Spinach Salad

Ingredients
- 1 lb. spinach
- 1/2 c. salad oil
- 2 Tbsp. sugar
- 2 Tbsp. wine vinegar
- 1 tsp. finely grated onion
- 1/2 tsp. salt
- 1/4 tsp. dry mustard
- 6 slices bacon, fried and crumbled
- 4 hard-boiled eggs, chopped
- 1 hard-boiled egg, sliced
Directions

1Wash and drain spinach.

2Transfer to large bowl and chill. In separate bowl, combine oil, sugar, vinegar, onion, salt and mustard.

3Beat the dressing or mix in blender until it becomes thick and syrupy.

4Tear spinach and add bacon and chopped eggs. Pour dressing over salad.

5Let stand for 1 hour.

6Toss the salad to mix it and garnish with egg slices.
