- 5 ounces turkey smoked breast of
- 8 ounces asparagus tips
- 1 bunch spinach
- 2 eggs hard-cooked
- 1 green onions
- tomatoes 2 med., optional
- 4 tablespoons prepared mustard
- 3 tablespoons water
- 6 tablespoons oil
- 2 tablespoons vinegar

11. Slice the turkey into 1/2 inch strips. Drain the asparagus. Wash and stem the spinach and chop coarsely.

22. Chop the eggs and onion. Slice the tomatoes, if used.

33. Prepare the dressing by placing the mustard in a bowl. Gradually whisk in the water until it is thoroughly incorporated. Slowly beat in the oil. Add the vinegar and beat until well combined.

44. When ready to serve, toss all the salad ingredients together in a bowl. Pour on the dressing and serve.
