- 1 Tbsp. polyunsaturated vegetable oil
- 7 drops yellow food coloring (optional)
Directions

1Clean opossum well, cut up as desired and boil until it is tender.

2Take 4 large sweet potatoes and boil until tender. Place opossum and sweet potatoes in a large pan and bake until brown.

3Season as desired and serve while hot.
