Egg White Bacon Breakfast Sandwich

  • 2 slices Bacon
  • 2 whole Egg Whites
  • 1/2 whole Avocado
  • 2 slices Whole Wheat Bread
  • Salt And Pepper, to taste
  • 1 slice White Cheddar Cheese
  • 4 leaves Spinach

Directions

    Line a baking sheet with foil and put the bacon on it. Place it in the oven and set the temperature at 425°F (do not preheat the oven). Bake it for about 15 minutes.

    Heat a medium size skillet and coat with nonstick spray. Cook the eggs until done, keeping them in one piece.

    Spread half of the avocado onto one side of the whole grain bread. Sprinkle with salt and pepper. Top with the egg white, bacon, cheese and then spinach. Place in a panini griddle or into a skillet to brown the outer sides of the sandwich.
