  • 8 egg whites
  • salt
  • 1 teaspoon baking soda
  • 2 1/16 cups powdered sugar
  • 1 1/8 cups flour without yeast
  • 1 teaspoon vanilla extract
  • 1 lemon zest

    Preheat oven to 160 degrees Celsius.

    Beat the egg whites to stiff peaks with a pinch of salt and the baking soda.

    Add the sifted sugar gradually, beating with the electric mixer each time you add some.

    Slowly mix in the flour little by little using a wooden spoon.

    Add the vanilla and lemon zest.

    Pour in an ungreased angel food cake pan.

    Bake for about 35 minutes or until cooked through. Remove from oven, and turn upside down on the serving plate.

    Allow to stand until cool and the cake falls naturally.
