- 8 egg whites
- salt
- 1 teaspoon baking soda
- 2 1/16 cups powdered sugar
- 1 1/8 cups flour without yeast
- 1 teaspoon vanilla extract
- 1 lemon zest
Directions

1Preheat oven to 160 degrees Celsius.

2Beat the egg whites to stiff peaks with a pinch of salt and the baking soda.

3Add the sifted sugar gradually, beating with the electric mixer each time you add some.

4Slowly mix in the flour little by little using a wooden spoon.

5Add the vanilla and lemon zest.

6Pour in an ungreased angel food cake pan.

7Bake for about 35 minutes or until cooked through. Remove from oven, and turn upside down on the serving plate.

8Allow to stand until cool and the cake falls naturally.
