Egg Yolk Sponge Cake

  • 1 1/2 c. sifted cake flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 6 egg yolks (1/2 c.)
  • 1 c. sugar
  • 1/2 c. boiling water
  • 2 tsp. vanilla

Directions

    Grease and flour 13 x 9-inch cake pan.

    Sift together and set aside the flour, baking powder and salt.

    Beat in mixing bowl until very thick and lemon colored the egg yolks.

    Beat in sugar gradually.

    Blend in slowly on low speed the boiling water and vanilla.

    Quickly blend in dry ingredients.

    Pour into pan.

    Bake until top springs back at 350° for 20 to 25 minutes.
