- 1 eggplant (do not peel)
- a little flour, salt and pepper
- 1/2 lb. grated cheese
- 1 large can tomatoes or puree
- 2 eggs
- 1 large onion, chopped
Directions

1Slice eggplant in 1/4-inch slices.

2Put them in flour and then into beaten eggs.

3Brown in skillet on both sides; set aside. Combine onion and tomatoes.

4Add a little sugar or Equal, salt and pepper.

5Cook 15 minutes.

6In baking dish, first put some sauce, then layer of eggplant, then some grated cheese; alternate layers. Put Parmesan cheese on top.
