- 1 large eggplant, cooked, drained and mashed
- 1 (8 oz.) pkg. sharp cheese, grated
- 4 eggs
- 1/2 tsp. pepper
- 1 stick margarine
- 1 1/2 c. milk
- 1 1/2 c. cracker crumbs
- 1 tsp. salt
- 1 can LeSueur peas, drained
- sprinkle of garlic salt
- 1 can sliced water chestnuts, drained
- 1 can mushroom soup, undiluted
- grated cheese
- 1 can onion rings, crushed
Directions

1Cover with foil (shiny side out).

2Bake at 350° for 20 to 30 minutes.

3If onions need browning, take foil off for a few minutes.
