  • 1 large eggplant, cooked, drained and mashed
  • 1 (8 oz.) pkg. sharp cheese, grated
  • 4 eggs
  • 1/2 tsp. pepper
  • 1 stick margarine
  • 1 1/2 c. milk
  • 1 1/2 c. cracker crumbs
  • 1 tsp. salt
  • 1 can LeSueur peas, drained
  • sprinkle of garlic salt
  • 1 can sliced water chestnuts, drained
  • 1 can mushroom soup, undiluted
  • grated cheese
  • 1 can onion rings, crushed

Directions

    Cover with foil (shiny side out).

    Bake at 350° for 20 to 30 minutes.

    If onions need browning, take foil off for a few minutes.
