- 1 medium eggplant, peeled and sliced
- 1 tsp. salt
- 1 stick margarine, melted
- 1 1/2 c. milk
- 4 eggs
- 1/2 tsp. pepper
- 1 1/2 c. grated sharp cheese
- 1 medium onion
Directions

1Cook eggplant until mushy and drain.

2Add all ingredients except 1/2 cup of cheese and 1/2 cup of cracker crumbs and small amount of melted margarine.

3Mix well, pour into baking dish. Sprinkle with reserved cheese, crumbs and margarine.

4Bake at 350° for 25 to 30 minutes.

5Yields 6 to 8 servings.
