- 1/4 c. salad oil
- 1 Tbsp. brown sugar
- 3 Tbsp. vinegar
- 1 tsp. pepper
- 4 oz. can pimento
- 1/2 c. Parmesan cheese
- 1 c. cracker crumbs
- 2 eggs, slightly beaten
- salt to taste
Directions

1Cook eggplant

2until tender.

3Mix all together and bake in greased casserole for 30 minutes at 350°.

4Add grated sharp cheese and put back into oven until melted.
