Eggplant Casserole

  • 1 large eggplant
  • 1/4 c. salad oil
  • 1 Tbsp. brown sugar
  • 3 Tbsp. vinegar
  • 1 tsp. pepper
  • 4 oz. can pimento
  • 1/2 c. Parmesan cheese
  • 1 c. cracker crumbs
  • 2 eggs, slightly beaten
  • salt to taste

Directions

    Cook eggplant

    Mix all together and bake in greased casserole for 30 minutes at 350°.

    Add grated sharp cheese and put back into oven until melted.
