- 2 large eggplant
- 3 c. cornbread
- 1 lb. sausage, browned and drained
- 1/3 c. butter
- 2 c. chopped onion
- 1 (16 oz.) can tomatoes
- 1 egg
- pepper to taste
- cracker crumbs
Directions

1Preheat oven to 350°.

2Cook eggplant.

3Mix with other ingredients except cracker crumbs.

4Place in a 3-quart casserole dish.

5Sprinkle the fine cracker crumbs on top and dot with butter.

6Bake 1 hour.

7If planning to freeze casserole, bake about 45 minutes.
