  • 1 large eggplant
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1/2 c. diced cheese
  • 1 (10 oz.) can cream of mushroom soup (undiluted)
  • salt and pepper to taste
  • 10 crackers, crushed
  • butter to taste

Directions

    Wash eggplant and cut in cubes.

    Boil 3 minutes or until tender; drain.

    Combine ingredients.

    Place in baking dish.

    Dot with butter.

    Bake at 375° for 15 to 20 minutes or until bubbles. Place cheese slices on top.
