- 1 large eggplant
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 1/2 c. diced cheese
- 1 (10 oz.) can cream of mushroom soup (undiluted)
- salt and pepper to taste
- 10 crackers, crushed
- butter to taste
Directions

1Wash eggplant and cut in cubes.

2Boil 3 minutes or until tender; drain.

3Combine ingredients.

4Place in baking dish.

5Dot with butter.

6Bake at 375° for 15 to 20 minutes or until bubbles. Place cheese slices on top.
