- 2 cans tomato paste
- 1 large onion
- 1 clove garlic
- 1 Tbsp. sugar
- 1 tsp. oregano
- 1 Tbsp. parsley flakes
- salt and pepper
- Mozzarella cheese
Directions

1Brown onion and garlic in 1 tablespoon of oil.

2Add paste and 2 cans of water; simmer for 30 minutes.

3Cut eggplant into thin slices.

4Place in salt water for 1 hour.

5Rinse and drain.

6Fry eggplant until brown on both sides.

7Layer sauce, eggplant and cheese.

8Bake for 1 hour at 350°.
