Ingredients
- 1 large eggplant
- 1 can whole tomatoes
- 1 c. grated cheese
- 1/3 c. bread crumbs
- 1 c. finely ground bread crumbs, buttered
- 2 eggs
- 1 large chopped onion
- 6 Tbsp. margarine
- salt and pepper
Directions

1Peel eggplant, cut into small pieces and boil in salted water until tender.

2Drain and mash.

3Saute onions in margarine until tender but not brown.

4Add eggplant, tomatoes, cheese and 1/3 cup bread crumbs.

5Add eggs, cooking and stirring until eggs are cooked.

6Pour into baking dish and top with buttered crumbs.

7Bake at 350° until brown on top.
