- 1 eggplant
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 can tomatoes
- 1 small green pepper, chopped
- 1 small onion, chopped
- 1 tsp. salt
- 1 Tbsp. brown sugar
- 1 c. corn bread crumbs
- 1/2 c. grated cheese
Directions

1Peel eggplant, slice and cook until tender, then mash.

2In a saucepan, melt butter.

3Blend in flour.

4Add tomatoes, pepper, onion, salt, brown sugar and bread crumbs.

5Mix well and add mashed eggplant.

6Place in a casserole and top with grated cheese. Bake at 375° about 30 minutes.
