- 1 medium eggplant
- 1/2 c. chopped onion
- 1/2 c. green pepper
- 1 qt. tomatoes or 28 oz. can
- salt to taste
- 1/4 c. Parmesan cheese
- 1/2 tsp. garlic powder
- 1/2 c. butter or oleo
- pepper to taste
Directions

1Peel eggplant; cut into 2-inch pieces.

2Saute eggplant in half of the butter until opaque.

3Remove to greased casserole dish. Saute onion and green pepper in remaining butter.

4Add garlic, salt and pepper.

5Cook until tender.

6Add to eggplant.

7Add tomatoes to casserole.

8Sprinkle with cheese.

9Bake at 350° until tomatoes are bubbly and cheese has melted.
