- 1 eggplant
- 2 Tbsp. margarine
- 2 Tbsp. flour
- 1 c. milk
- 2 eggs, separated
- 1 c. grated cheese
- 2 tsp. grated onion
- 3/4 c. graham cracker crumbs
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Peel, cut into chunks or slices and place eggplant in water to cover.

2Bring to a boil and when done, drain and mash; set aside. Melt margarine, add flour and stir.

3When smooth, add milk and stir constantly until thickened.

4Add eggplant to creamed mixture along with cheese, cracker crumbs, seasonings and beaten egg yolks.

5Fold in beaten egg whites.

6Turn mixture into a greased pan or dish and bake at 375° until firm, about 40 minutes.

7Serves 6 to 8.
