- 1 eggplant, peeled and cubed
- 1 can cream of mushroom soup
- 2 eggs
- 1 Tbsp. sugar
- 1/2 c. chopped onions
- 1 c. American cheese/Velveeta
- 1 c. cracker bread crumbs
- 1/2 stick butter
- 1/2 to 1 c. ham
Directions

1Cook eggplant until tender in salt and water and drain.

2Add soup, eggs, sugar, onions, cheese and 1/2 cup breadcrumbs.

3Mix well and put in baking dish.

4Mix butter and other crumbs and put on top.

5Bake 30 minutes at 350°.
